Shrimp Broth

Jamba Gumbo


Heat water to a boil in 2 quart pot; add salt and shrimp shells; boil 1 minute & remove from heat.

In a large pot or tall chicken frying pan, place the butter and olive oil on medium high; add the scallions, celery and bell pepper; cook for about 2 minutes and add the garlic. After about a minute, add the flour and stir often with a large wisk until the flour turns golden brown, more or less 3 minutes. Add the shrimp broth little by little while stirring to avoid lumps. When the mix comes to a boil add the can of tomatoes and the tomato paste. Stir until smooth. Add cayenne pepper, cajun seasoning & black pepper and bring to a boil on medium high stirring often. Add Italian sausages and cook for 2 minutes on medium. Add shrimp & scallops, and stir. Add crab meat and stir. Cook for about 2 more minutes until shrimp are done and crab meat is heated through.

Serve in bowls with white rice as a topping.
