Chuletas a la Jardinera
(Garden Style Pork Chops)

Ingredients Directions

Season the pork chops in adobo seasoning at least 1/2 hour in advance. Slice the onion and green pepper into thin slices. Brown the chops in olive oil. Make sure that they are almost fully cooked. Remove the chops from the pan. Using the same pan add everything else in the order listed except the mixed vegetables. Cook for five minutes and then add the chops back to the pot trying to keep them at the bottom. Add the frozen mixed vegetables. Sprinkle a little adobo and salt on top of the mixed vegetables and cook until done. Serve over white rice.
