Pasta & Chicken

Season chicken liberally with adobo at least 1 hour before you start to cook it (preferrably from the night before - make sure you remove it from the fridge an hour before you start cooking). Start a pot with water for the pasta; when it boils, add salt and pasta and keep an eye on it while you prepare the chicken. In the meantime, heat the olive oil on high in a large pot. When hot, brown the chicken on one side and cook for 5 minutes; turn it and let it cook for 5 more minutes. Add the onion and celery, cover, and cook for 10 minutes, stirring as needed. Add the peppers and carrots, cover, and cook 5 minutes, stirring as needed. Add soups, water, liquid from the mushrooms, and the crushed boullion cube; smoosh around until it all blends and cover; the pot will probably be pretty sticky or browned on the bottom but that's normal. At this point (or maybe a bit before), the pasta should be ready... drain and set aside. When chicken comes to a boil again, add broccoli and mushrooms and cook for 3 minutes. Season with salt and pepper and an additional shake of the adobo; stir, turn off burner and leave covered for another 2 minutes. Mix in pasta (they might be stuck together but they'll loosen up), cover and let stand for 5 minutes. Stir before serving.
